Kemija hrane/Food chemistry

Prema Zakonu o hrani: « hrana je svaka tvar ili proizvod prerađen, djelomično prerađen ili neprerađen, a namijenjen je da ga ljudi konzumiraju ili se može očekivati da će ga ljudi konzumirati. Procesima metabolizma u organizmu doprinosu očuvanja homeostaze. Ovim projektom želimo istražiti i objasniti kemijske sastojke hrane. Razumjeti ulogu sastojaka hrane i enzima u metabolizmu hranjivih tvari, dobivanja energije u stanici i omogućavanje života. Prepoznati i predstaviti skupine sastojaka hrane koji predstavljaju opasnost za zdravlje čovjeka. Opisati promjene na sastojcima tijekom prerade i čuvanja hrane. According to the Food Act: « food is any substance or product processed, partially processed or unprocessed, and intended for human consumption or can be expected to be consumed by humans. Metabolic processes in the body contribute to maintaining homeostasis. With this project, we want to investigate and explain the chemical ingredients of food. Understand the role of food ingredients and enzymes in the metabolism of nutrients, obtaining energy in the cell and making life possible. Recognize and present groups of food ingredients that pose a danger to human health. Describe changes in ingredients during food processing and storage.
